Strawberry Ice Cream Recipe

These sweet and juicy berries are perfect for desserts like strawberry shortcake or added to salads for a pop of color. For a fun and easy recipe, try making homemade strawberry ice cream. All you need is strawberries, sugar, heavy cream, milk and vanilla.
Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 teaspoon vanilla extract
1 pint fresh strawberries, hulled and diced
1/4 cup granulated sugar (additional)
Instructions:
In a medium saucepan, combine the cream, milk, and sugar. Cook over medium heat, stirring occasionally, until the sugar has dissolved.
Remove from heat and stir in the vanilla extract.
In a separate bowl, combine the diced strawberries and additional sugar. Let sit for at least 30 minutes, or until the strawberries have released their juices.
Once the strawberries have released their juice, puree the mixture in a blender or food processor.
Stir the strawberry puree into the cream mixture.
Churn the mixture in an ice cream maker according to the manufacturer's instructions.
Transfer the ice cream to an airtight container and freeze until firm.
Scoop and serve!
